POKOTABI / KUFUKU±
KUFUKU±
Set in a renovated traditional wooden house in Soto-Kanda, KUFUKU± serves course menus that layer French technique onto Japanese minimalism, complete with curated wine pairings and an Asakusa Kaikarō noodle finale.
01 / ABOUT THE PLACE
Step through the entrance of this historic traditional Japanese residence, and a course meal begins within the calm, wooden interior, weaving French technique together with Japanese sensibility. True to the "±" in its name, each plate reflects a mindful dialogue: the additive richness of French cooking designed to highlight core ingredients, balanced by the subtractive restraint of Japanese cuisine that pares away the superfluous.
A meal might begin with a delicate monaka wafer incorporating white liver paste, leading naturally into seasonal seafood and warm dishes enriched with Japanese dashi broth. Main courses showcase carefully timed meats and seasonal fish. Towards the end of the progression, an intriguing bowl of ramen featuring bespoke noodles from Asakusa Kaikarō makes an appearance. The depth of the broth lingers alongside the echoes of French cooking, carrying a deep sense of satisfaction right through to dessert.
Pairings of wine and sake are curated to accompany the dishes; sharing personal preferences helps elevate the aromas and flavours of every plate. Seating encompasses counter and table arrangements alongside semi-private rooms, and advance reservations are recommended for both lunch and dinner. Preserving the distinctive character of older Japanese houses—including traditionally steep stairs—the setting offers an indulgent pause supported by attentive hospitality.
